Gluten, Dairy & Legume free recipes; some by design, others are just nice recipes that happen to be! There are recipes and also shopping 'finds', all of which are good for free from people and all yummy whether you are following a particular diet or not! Just because something is 'free from' doesn't mean everyone can't enjoy it - and you may be surpised at how much happier your body is.

'Special' is how my friends describe my food and me, I don't think it's entirely complimentary!

Paleo Spanish Sweet Potato Tarts

This isn't a Spanish recipe; it came out of my head, but it has peppers & chorizo in it so surely that makes it Spanish?

I admittedly nicked the pastry recipe from Bruce Fifes 'cooking with coconut flour' which is an awesome book. I'm not scientific enough to invent pastry recipes!

This made ten muffin tin sized tarts well it would if I hadn't wrecked one when I burnt my hand & then dropped one when I was getting them out.

You wanna make the fillings a bit in advance to let them cool a bit.

PEPPER FILLING (goes in the bottom of the tart)
1 small red onion
1 red pepper
1 small chorizo*
Tsp chopped garlic
Over a low heat sweat the onions with a pinch of salt, adding the chorizo then the peppers & garlic. Cook them long & slow til they are soft & sticky.
*a spoonful of smoked paprika and a pinch of cayenne in the mix will make it veggie! I'm always thinking of how you'll make it @MsCurlysue!

SWEET POTATO TOPPING
3 smallish sweet potatoes
Tbsp coconut  cream
2 eggs
Tbsp chopped parsley
Tsp smoked paprika
Microwave the sweet potatoes in their skins until soft, then cut them in half & let them cool for a bit. Once they're coolish scoop out the sweet potato and put it in a food processor with the other ingredients. Blitz until its a smooth thick liquid.

COCONUT ALMOND PASTRY
1/2 cup coconut flour
1/2 cup ground almonds
2 eggs
1/4 cup melted coconut butter, melted
1/4 tsp salt
Mix all the ingredients except the coconut flour together well & then sift in the coconut flour & mix again. Once the dough comes together knead for a minute then put between two pieces of greaseproof paper and roll out.

PUTTING THE TARTS TO TOGETHER
Cut out discs of pastry a bit bigger than than the muffin holes & gently push them down. Divide the pepper mix between the tarts & then spoon the sweet potato mix on top. It was a tbsp & a tsp on each for me. Don't worry about getting it smooth & fully covered - it will even out during cooking. Bake at 200c for fifteen  minutes.

Scallops with Chorizo Stew

I love scallops and with this chorizo stew they make a tasty meal with crusty bread. I haven't made a very beautiful job of serving here but you get the idea!

Serves 2

100g chorizo, chopped
50ml sherry
1/2 a red onion, sliced
Small garlic clove, crushed
6 tomatoes, chopped
Handful of baby spinach
50ml chicken stock
1 tsp turmeric
6 scallops
  • Fry the chorizo in olive oil for 3-4 minutes until crisp
  • Add the sherry and reduce then add the onion and garlic then cook for 5 minutes
  • Add the onions and garlic and cook for 5 minutes
  • Add the tomatoes, spinach, chicken stock and turmeric and cook for 8-10 minutes
  • Meanwhile, heat a frying pan and cook the scallops for 1 minutes each side - pay attention, scallops are easy to overcook.

Spanish-ish Chicken

This wasn't even authentic before I messed about with it, but is yummy and has a Spanish flavour! Serves 2.

2 Chicken Breasts, skin on
70g Chorizo
2 tsp Cumin Seeds
1 clove of Garlic, crushed
2 tbsp dry Sherry
450g baby new potatoes, sliced or cut into chunks
2 large Tomatoes, roughly chopped
Coriander Leaves to serve
  1. In a large frying pan with a kid fry the chicken breasts skin side down for 4 minutes
  2. Add the chorizo, cumin and garlic (just shove the chicken breasts to the side) and fry for a  minute before adding the potatoes and frying for another minute.
  3. Splash in the sherry, let it bubble then add the chopped tomatoes and stir.
  4. Season with S&P, pop the chicken breasts on top and put the lid on. Simmer for 15-20 minutes.
  5. Whenthe chicken and potatoes are cooked through, remove the chicken breasts, stir through the coriander and serve.

Chicken, Chorizo & Artichoke Baked Rice

This is a very tasty 1 pot meal (have you noticed I like 1 pot things yet?) which is so much nicer than it's constituent parts or the effort put in!

I had it for dinner last night and have some for lunch at work today in my aladdin thermos style bento box  - you can get them at Firebox or Lakeland (though they only have pink). A real lifesaver when it's difficult to get lunch out or you don't have a microwave/fridge at work - keeps food hot or cold til lunch!

Serves 4
1 x 300g (ish) jar of Artichoke Hearts in Olive Oil
4-6 Chicken Breast Fillets
1 Large Onion, chopped
2 Garlic Cloves, chopped
100g (ish) Chorizo, sliced - watch out when you are shopping, some of these contain gluten &/or dairy)
350g Basmati Rice
Pinch of Thyme
150 ml Dry White Wine
600ml Chicken Stock
Parsley to serve (optional)

Preheat oven to 180c

  1. Drain the artichoke hearts and reserve the oil - put a couple of tbsp in a flameproof casserole dish or frying pan (and transfer to a casserole dish later).

  2. Season the chicken breasts - you can keep them whole or cut them into chunks as I have here - and fry them until they are lightly browned. Set aside.

  3. Add a little more oil to the dish/pan and saute the onion and garlic until softened but not coloured (2-3 mins). Add the chorizo, thyme, and rice and cook, stirring,  for a couple of minutes. Add the wine and stir.

  4. Transferring to the casserole if you're not already in it, mix in the stock, artichokes and chicken pieces or put the whole breasts on top, pushing them in a bit. Cover and bake for 30-40 mins until the stock is absorbed and the chicken & rice are cooked. Scatter with the parsley (if using) and serve.
